Ready, Set, Cook! Special Edition Contest Entry. Potato casserole with salsa items in it and baked. One of those rare combinations that can serve as any meal and stretched with added items like a fried egg on top of a serving. Ingredients:
1 cup chicken broth |
1 (1 1/4 ounce) package taco seasoning |
1 (8 1/2 ounce) can whole corn (drained not rinsed) |
1 (3 1/2 ounce) package sun-dried tomatoes (dried ones, not in oil) |
1 (20 ounce) simply potatoes diced potatoes with onion (4 servings) |
2 (15 1/4 ounce) cans black beans (drained not rinsed) |
1/4-1 red bell pepper (diced, added for color or to taste) |
1 bunch green onion (sliced for placement upon serving) |
1 cup cheese |
1 cup sour cream |
Directions:
1. Process into a sauce (mini food processor): chicken broth, taco seasoning, sundried tomatoes. 2. Mix all ingredients (except green onions) thoroughly. 3. Pour into a greased baking pan or individual serving bake pans. 4. Cover with foil. 5. Bake at 425 F for 30 minutes, less for individual servings. 6. Stir. 7. Sprinkle cheese and green onion on top of a dallop of sour cream to serve! 8. Makes 4-8 servings, depending on if used as a snack, side or meal. |
