Baked Eggs With Cream Spinach And Parmesan |

A very pretty brunch for two....or more Recipe and photo from the book Brunch, The Perfect Weekend Treat Ingredients:
2 tbl butter, plus a little extra for greasing |
fresh spinach, about 3 cups |
1/4 tsp nutmeg |
4 eggs |
1/4 cup light cream |
2 tbl freshly grated parmesan |
salt and pepper |
Directions:
1. Preheat oven to 325 F/160C, lightly grease 2 individual ceramic gratin dishes (or similar) 2. Melt the butter in a large skillet over low heat 3. Add the spinach 4. Stir until wilted 5. Season with nutmeg and divide between prepared dishes 6. Gently break two eggs into each dish 7. Pour the cream over the eggs, sprinkle with Parmesan, then season with salt and pepper 8. Bake for about 10 minutes or until whites are set and cooked and yolks are soft 9. Serve immediately |
