A great brunch dish! Garnish with sour cream. Ingredients:
8 ripe tomatoes, hollowed out |
salt & pepper |
8 t. chopped parsley |
garlic salt |
8 eggs |
butter |
basil leaves |
1 c parmesan cheese |
Directions:
1. Preheat oven to 400 2. Place tomato sheels in buttered baking dish 3. Sprinkle each with salt, pepper, 1 t. parsley, and pinch of garlic salt 4. Bake 10 minutes 5. Remove from oven and break an egg into each toato 6. Dot with butter 7. Sprinkle with basil 8. Return to oven, bake 20 more minutes 9. Remove and top each with parmesan cheese 10. Bake another 10 minutes. |
