If not for breakfast maybe for dinner Ingredients:
4 lg baking potatoes |
1/4 c butter |
salt & pepper |
1/2 c grated cheese |
4 sm eggs |
1/4 c heavy cream |
2 ts chopped chives |
Directions:
1. Preheat oven to 350 degrees. Scrub and dry potatoes, place on a baking 2. sheet and rub a little oil or butter over skins. Place on baking sheets, 3. bake 1 to 1 1/4 hours. Remove from oven. 4. Cut a slice lengthwise off each potato. Scoop out insides. Mash scooped out 5. potatoes in a bowl with remaining butter and seasoning beat cheese into 6. potato mixture. Press mixture back into shells, leaving a hollow in center 7. large enough for an egg. Season and spoon the cream over. Return to the oven. Bake 8 to 10 minutes until eggs are lightly set. Sprinkle the chives and serve. |
