Baked Eggs in Pepper Rings |

From The Recipe Hall of Fame Cookbook II Ingredients:
1 large green bell pepper (or red) |
1 tablespoon butter |
4 eggs |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1/8 teaspoon oregano |
1/8 teaspoon basil |
4 tablespoons cream |
4 tablespoons fresh breadcrumbs |
2 teaspoons parmesan cheese |
2 tablespoons butter |
Directions:
1. Cut pepper into 4 rings, 1/2 thick. 2. Cook in lightly salted water for 3-5 minutes. 3. Drain. 4. Melt 1 T butter in shallow 1 quart casserole in oven. 5. Place pepper rings in casserole. 6. Break 1 egg into each ring. 7. Sprinkle with seasonings. 8. Pour 1 T cream over each. 9. Combine crumbs, parmesan and butter. 10. Sprinkle over. 11. Bake at 350 for 15-20 minutes or until eggs are set. 12. This doubles, triples and more for a large brunch. 13. Can easily be prepared ahead. |
