This is the perfect healthy, quick, easy recipe for anyone waiting on dinner, home. Ingredients:
2 small eggplants |
roasted garlic and shallots grapeseed grilling oil |
2 eggs |
flour |
parsley |
oragano |
1 pack of melba toast |
grated parmano cheese |
Directions:
1. pre-heat the oven to 350 2. peel and cut the eggplant into 4 equal quarters lengthwise 3. cover the eggplant in the grapeeed oil, let it sit while u do the next steps. 4. smash the meba toast in a bag to make it like bread crumbs. 5. put the melba crumbs on a plate mix in parsley, oregano, and parmano cheese 6. beat 2 eggs in a bowl 7. pour flour in a separate bowl 8. dip the eggplant into the egg , then the flour,then the egg, then roll it evenly in the melba mixture 9. use the grapeseed oil on the baking sheet so it wont stick 10. place each of the eggplant quarters on the tray 11. let them bake for 10 mins 12. put the oven on broil for another 5 mins 13. use cucumber dressing 4 a dipping sauce |
