BAKED EGG SCRAMBLE This is a recipe I obtained from an Estate sale. I obtained it when I purchased the family collection from the Fisher Estate in Irving, Texas in 1997. Ingredients:
6 large eggs |
1/2 cup evaporated milk |
1/4 teaspoon salt |
1/8 teaspoon pepper |
1/4 cup chopped green bell pepper |
2 large tomatoes diced |
1 tablespoon chopped fresh basil |
1 teaspoon fresh dill finely chopped |
1 cup grated cheddar cheese plus 2 tablespoons divided |
Directions:
1. Preheat oven to 325. 2. Lightly grease quiche dish. 3. In large bowl whisk together eggs, milk, salt, and pepper. 4. Stir in green pepper, tomatoes, basil and dill. 5. Sprinkle 1 cup cheese over bottom of prepared dish. 6. Pour egg mixture over cheese then bake for 20 minutes. 7. Sprinkle remaining cheese on top and bake 5 minutes. |
