low fat baked egg rolls
Ingredients:
1 chicken breast, cubed
1 teaspoon minced ginger
2 cups napa cabbage
1/4 pounds bean sprouts
1/2 cup shredded carrot
3 green onions, finely chopped
2 tablespoons oyster sauce
18 egg roll wrappers
Directions:
1. Stir fry chicken and ginger until chicken is cooked through, add the vegetables and cook for about 2 minutes. Add the oyster sauce and cook for about 1 more minute. Let mixture cool.
2. Using about 2 tbsp. filling for each egg roll, roll up and seal with egg white. Place on a baking sheet coated with cooking spray and spray egg rolls with the cooking spray. Bake at 425 for 18 minutes. Enjoy with your favorite dipping sauce.
