Baked Cranberry Pudding With Butter Sauce |

This is an old family recipe, the kind written on stained and yellowed recipe cards in fountain pen. It's called pudding but its more like a moist cake with fruit in it. We like it, especially around the the holidays when cranberries are more prevalent. Ingredients:
2 cups flour |
1 cup sugar |
2 1/2 teaspoons baking powder |
3 tablespoons melted butter |
2/3 cup milk |
1 egg |
2 cups fresh cranberries |
butter sauce: 1/2 cup melted butter, 1 cup sugar, 3/4 cup light cream or half-and-half. |
Directions:
1. Sift dry ingredients together into a bowl. Add the melted butter, milk and egg. 2. Beat for 2 minutes. 3. Stir in the cranberries. 4. Pour into a buttered 8-inch square baking dish. 5. Bake for 40 minutes in 350F degree oven. 6. To make the butter sauce, mix the melted butter, sugar and cream together in a small sauce pan. Cook for 5 minutes over medium-low heat, stirring constantly. 7. When the pudding has finished baking, cut into even slices and pour a generous portion of the warm butter sauce over each piece. |
