This is a recipe that I made up for special functions that I catered when I worked in a local hospital. Simple to make. Ingredients:
12 ounces cod fish fillets |
1 1/2 tablespoons butter |
4 slices tomatoes |
2 green pepper slices |
6 red onion rings |
2 tablespoons dry white wine |
salt and pepper |
Directions:
1. Pre heat oven to 425 f. 2. Place fillets in a glass baking dish. 3. Bush with melted butter 4. Top with tomato, green pepper, and onion slices. 5. Pour wine in over fish. 6. Season with salt and pepper. |
