Light and tasty, perfect in our hot weather. I found the recipe in our local grocery's ad. Ingredients:
4 (5 ounce) salmon fillets |
1/2 lemon, juice of |
1 tablespoon olive oil |
salt and pepper |
4 dill sprigs (to garnish) |
4 lemon wedges (to garnish) |
1/4 cup light sour cream |
1/4 cup light mayonnaise |
2 tablespoons lemon juice |
2 tablespoons capers, drained and coarsely chopped |
2 teaspoons chopped fresh dill |
1 clove garlic, chopped |
salt and pepper |
Directions:
1. Preheat oven to 425. 2. Place salmon in a non-stick baking dish. 3. Drizzle with lemon juice and oil. 4. Season with salt and pepper. 5. Cover and bake 12- 15 minutes, or until cooked through. 6. Meanwhile, combine ingredients for sauce. 7. When salmon is cooked, uncover and cool to room temperature. 8. Refrigerate until needed. 9. Top salmon with sauce and garnish with dill and lemon. |
