Easy way to make Mexican Ingredients:
6 poblano peppers |
2 cups sharp cheddar cheese |
1 onion, chopped |
frozen beef or chicken fajitas |
Directions:
1. Brush each pepper with olive oil on both sides and roast on a cookie sheet. When peppers are done roasting, peel skin off. Make a slit in one side of the pepper and clean out seeds. 2. Mix in a large bowl, the cheese and onion. 3. Cook fajitas according to instructions on package and mix with cheese-onion mixture. 4. Fill peppers with cheese mixture. Place in a glass casserole dish. 5. Bake at 350 degrees for 15 minutes. |
