A healthier but just as good version! Ingredients:
1/3 cup italian seasoned breadcrumbs |
1/4 cup parmesan cheese, grated |
2 -4 boneless chicken breasts |
2 eggs, beaten |
2 teaspoons olive oil |
1/2 cup mozzarella cheese, shredded |
linguine |
1 (18 ounce) jar marinara sauce |
Directions:
1. Lightly grease baking dish (large enough for chicken breasts). 2. Combine bread crumbs and parmesan cheese in shallow dish. 3. Dip chicken in eggs, then coat with the bread crumb mixture. 4. Arrange chicken in greased baking dish. Drizzle with oil. 5. Bake at 375 degrees for 25 minutes or until chicken in cooked through. 6. Sprinkle with mozzarella cheese. 7. Bake an additional 5 minutes or until cheese is melted. 8. Prepare pasta according to package directions. Drain. 9. Heat sauce in sauce pan, and pour over pasta on individual plates. 10. Top with chicken. |
