Baked Chicken Breasts With Cheese |

A dish that sounds delicious and easy. Ingredients:
3 tablespoons butter, divided |
4 boneless chicken breasts |
salt and pepper, to taste |
2 scallions, thinly sliced |
1 tablespoon parsley, chopped fresh |
1/2 teaspoon dried thyme |
1/2 cup chicken stock |
3 tablespoons dry white wine |
3/4 cup swiss cheese, grated |
2 tablespoons parmesan cheese, grated |
2 tablespoons breadcrumbs |
Directions:
1. Preheat oven to 375°F. 2. Lightly butter a shallow baking dish. 3. Place chicken in baking dish and sprinkle with salt, pepper, scallions, parsley, and thyme. 4. In a measuring cup combine broth and wine and pour over chicken, 5. Cover and bake 20 minutes. 6. In a small bowl combine cheeses and breadcrumbs. 7. Remove chicken from the oven and sprinkle with cheese mixture. 8. Dot with remaining butter and place under broiler until cheese is melted and golden. |
