BAKED CHEESE TOMATOES This recipe came from an estate sale. I obtained it when I purchased the family collection from the Gee Estate in Quinlan, Texas in 1994.
Ingredients:
4 large firm tomatoes
2 cups grated mild cheddar cheese
1 cup toasted bread cubes
2 teaspoons basil
1/2 teaspoon salt
1 tablespoon parsley flakes
1/2 cup chopped cashews
2 tablespoons butter melted
1/2 cup finely chopped white onion
1/2 cup tomato pulp
Directions:
1. Preheat oven to 350 then core tomatoes and scoop out pulp leaving sturdy shell.
2. Sprinkle lightly with salt then combine remaining ingredients.
3. Fill tomato shells with cheese mixture then bake covered for 30 minutes.
