Great tasting carrot casserole. Creamy and cheesy. Ingredients:
2lbs carrots,cut in 1/4 slices,divided |
6 slices swiss cheese,divided |
4tbs butter |
1c minced onion |
3tbs flour |
1tsp salt |
1tsp chili powder |
2c milk |
1c fresh bread crumbs |
5 slices bacon,cooked and crumbled |
2tbs butter |
Directions:
1. Pre heat oven to 350 2. Bring a lg. saucepan of water to a boil. Add carrots and cook for 5-7 mins. or till carrots are crisp-tender. Plunge in ice water to stop cooking. 3. Layer half the carrots in a 2qt. baking dish. Cover with 3 slices swiss cheese. Repeat with remaining carrots and cheese slices. 4. In med saucepan,melt butter over med. heat. Add onion and cook for 2 mins,or till soft. Sprinkle flour,salt and chili powder over onions Cook for 1 min.,stirring constantly.. Add milk and cook for 10 mins,stirring till thickened. Pour sauce over carrots and cheese. 5. In a small bowl,combine bread crumbs,melted butter and bacon. Sprinkle evenly over carrots and sauce. Bake for 25 mins. |
