A tasty and different treat. These are a great alternative to classic french fries and a good way to get some healthier veggies into kids! These couldn't be easier to prepare too. Simple and good. :)
Ingredients:
1 lb peeled, skinny baby carrots (or regular carrots, peeled and cut into sticks)
1 tbsp olive oil
salt and pepper, to taste
Directions:
1. Preheat oven to 400 F.
2. If baby carrots are on the thick side, slice them lengthwise in halves or quarters. Toss carrots with olive oil and season w/ salt and pepper.
3. Place carrots in a single layer on a baking sheet lined w/ parchment paper.
4. Bake for 20-25 minutes or until they start to crisp.
5. Serve as is or with your favourite dip. Garlic aoili is great w/ these!
