Low fat Butternet Squash bake Ingredients:
675 g butternut squash (1 medium b-squash) |
1/2 tsp paprika |
3 tbsp chives |
3 tbsp fat free sour cream |
1 slice bread |
10 g butter |
25 g parmesan |
Directions:
1. Preheat oven at 200,Gas6 2. Halve squash lengthways 3. Scoope and discard seeds 4. Season and put in roasting tin half full of water 5. Cover with foil and bake for 40 mins 6. Drain. 7. Allow to cool. 8. Scrape flesh out - mix with Paprika, chives and creme fraiche (not sour cream!) and season. 9. Pile back into the skins. 10. Sprinkle with breadcrumbs and parmesan. 11. Bake for 15 mins. |
