BAKED BROCCOLI TUNA OMELET This recipe came from an estate sale. I obtained it when I purchased the family collection from the Estes Estate in Rhome, Texas in 1988. Ingredients:
3 cups frozen broccoli cuts |
1-1/2 cups shredded swiss cheese |
3/4 cup chopped red pepper |
3/4 cup chopped white onion |
2 small uncooked potatoes quartered lengthwise and cut into 1/8” thick slices |
12-1/2 ounce can tuna in spring water drained |
3 eggs |
2 cups milk |
1/4 cup cornstarch |
1/2 teaspoon leaf thyme |
1/4 teaspoon pepper |
Directions:
1. Preheat oven to 400 then lightly grease a rectangular baking dish. 2. In baking dish combine broccoli, cheese, red pepper, onion, potato and tuna then mix lightly. 3. In small bowl beat eggs then whisk in milk. 4. Add cornstarch, thyme and pepper then whisk until cornstarch is dissolved. 5. Pour egg mixture evenly over tuna mixture then bake at 400 for 1 hour. |
