A great winter-time appetizer….. The ingredients fuse into a rich creamy medley. Even Ravens fans liked it! Ingredients:
1/2 lg sweet onion |
2 tbs. butter |
2 tbs. sugar (or honey) |
1/2 c. pecans |
1/2 c. fresh cranberries |
1 8” to 10” brie wheel (16 oz) (thicker cakes work better) |
1 french baguette |
Directions:
1. Slice onion thin 2. Finely chop Pecans and Cranberries in food processor. 3. In a 10” sauce pan: 4. Melt butter over medium heat 5. Add onions and sauté until limp and translucent 6. Sprinkle sugar and stir gently until the onions turn brown 7. Add Pecans and cranberries, stir to blend 8. Continue to sauté until the pecans give off a light toasted aroma 9. Preheat oven to 400 degrees 10. Preparing the Brie cake: 11. Carefully remove the top rind to within 1/4” of the side rind. 12. Place the cake in a close fitting oven-proof casserole dish 13. Top the brie cake with the Onion/Pecan/Cranberry topping 14. Cover loosely with foil 15. Bake 30 minutes 16. Remove Foil and bake for an additional 20 to 30 minutes. 17. You know this is done when most of the topping sinks into the almost liquid cheese and the rind forms a toasted crust. 18. Serve with croutons made from a French Baguette: 19. Cut 1/4” slices on the bias; drizzle with EVOO; spread loosely on a baking sheet and place in a 300 degree oven until lightly toasted. |
