A tasty appetizer for any occasion. Ingredients:
1/2 cup water |
1 lb eggplant, sliced, 1/2 inch thick (12 slices) |
1/3 cup italian breadcrumbs |
vegetable oil cooking spray |
Directions:
1. grease skillet with cooking spray. 2. Slice eggplant. 3. moisten with water. 4. cover with breadcrumbs. 5. cook in skillet until golden on both sides. 6. spritz with lemon juice(optional). |
