From TOH Simple & Delicious mag Jan/Feb 2009. Ingredients:
2 cups pancake mix |
1 1/2 cups nonfat milk |
1 egg |
1 tablespoon canola oil |
1 teaspoon ground cinnamon |
1 cup blueberries (fresh or frozen) |
butter |
maple syrup |
Directions:
1. In a large bowl, combine the pancake mix, milk, egg, oil and cinnamon just until blended (batter will be lumpy). Fold in blueberries. 2. Spread into a greased 15 x 10 x 1 inch baking pan. Bake at 400 degrees for 10-12 minutes or until golden brown. Serve with butter and syrup. |
