These tangy-sweet beans with chunks of smoked ham prepared on the stovetop make a great side or potluck dish. Ingredients:
2 tsp. vegetable oil |
1 medium onion, diced |
12 oz. smoked ham, cut in small chunks or cubes |
3 cloves garlic, minced |
1 (15 oz) can navy beans, drained |
1 (15 oz.) can fire-roasted tomatoes, or other canned tomatoes |
1/2 cup water |
1/4 cup molasses |
1 tbsp. dijon mustard |
1 tbsp. apple cider vinegar |
1/2 tsp. peper |
Directions:
1. Heat oil in a large skillet over medium-high heat. Add onion and cook until softened, for about 5 minutes. 2. Add the ham and garlic. Cook 3 minutes more. 3. Stir in beans, tomatoes, water, molasses, mustard, vinegar and pepper. Bring to boiling, reduce to medium simmer, and cook for about 15 minutes, or until most of the liquid is reduced, and thickened. Stir frequently. 4. Serve as a side dish. |
