This is a great dish to take to pot luck picnics. It's also a hit with those who usually don't care for beans (myself included). Prep time doesn't include overnight soaking. Ingredients:
1 1/2 cups dried white beans |
1/2 lb bacon |
1/2 cup onion, chopped |
1/2 cup beer |
2 tablespoons molasses |
2 tablespoons brown sugar |
3 tablespoons catsup |
1 tablespoon dry mustard |
1 teaspoon vinegar |
1 teaspoon curry powder |
1 tablespoon worcestershire sauce |
1 teaspoon salt |
Directions:
1. Soak the beans overnight. Drain in the morning and cover with fresh water and simmer for half an hour. 2. Dice the bacon and cook in a frying pan until crisp, reserve 3 Tbsp of the drippings. 3. Combine all ingredients with the beans and place in a buttered baking dish. Cover and bake at 250 degrees farenheit for 3-6 hours, cook uncovered for the last hour of cooking. |
