I was off to preheat the barbecue for Barbecue Jack Chicken, but it turned out that we were all out of propane. I needed to improvise something quickly - we had places to go! No problem. Here is my quick and easy solution. Ingredients:
2 boneless skinless chicken breasts |
1/2 cup seasoned bread crumbs or 1/2 cup shake-and-bake |
2 teaspoons barbecue sauce |
2 slices monterey jack pepper cheese |
Directions:
1. Preheat oven to 375°F. 2. Moisten chicken breasts, then coat with crumbs and bake for 20 - 25 minutes. 3. Top each breast with 1 tsp of bbq sauce and a slice of cheese and return to the oven until cheese has melted. |
