Baked Bacon Cheese Sprouts |

Ingredients:
1 quart brussels sprout |
2 tablespoons unsalted butter |
1/2 cup chopped scallion |
1 tablespoon flour |
1/2 slice bacon |
1 1/2 teaspoons chopped garlic |
1 1/2 teaspoons chopped parsley |
8 fluid ounces reserved cooking water |
salt and pepper |
1/2 cup grated cheddar cheese |
2 1/2 tablespoons breadcrumbs |
Directions:
1. Preheat oven 325°F. 2. Wash and x bottom of the Brussels sprouts. 3. Place them in boiling water, enough to cover. 4. Simmer for 10 minutes or until they are tender. 5. Drain and reserve 1 cup of the hot liquid. 6. Melt the butter in small skillet. 7. Add the scallions and sauté for 3 minutes. 8. Stir in the flour and cook until the flour is dissolved, 3 minutes. 9. Add the bacon, garlic and parsley; cook for 3 minutes more. 10. Pour in the reserved water and add salt and pepper. 11. Bring to a boil, stirring constantly until thickened to the consistency of heavy cream. 12. Remove the bacon from the sauce. 13. Place the sprouts base down in a buttered casserole and pour the sauce over them. 14. Top with the grated cheese and then the breadcrumbs. 15. Bake for 30 minutes or until the top is browned. |
