Baked Avocado Vinaigrette |

It's heresy to post a baked avocado recipe in the middle of summer. But delicious is delicious. Ingredients:
4 medium avocados, halved |
1 tsp salt |
1/2 tsp pepper |
6 tbsp olive oil |
1 tbsp finely chopped chives |
3 tbsp tarragon vinegar |
3 tbsp finely chopped dill pickle |
1 tbsp finely chopped parsley |
Directions:
1. Place the avocado halves (seeded) cut side up in a shallow baking pan with some hot water. 2. Bake for 15 minutes at 325. 3. Mix remaining ingredients into a vinaigrette while baking the avocados. 4. Fill each cavity with the vinaigrette and serve. |
