Ingredients:
1 tablespoon butter or margarine |
1 1/2 tablespoons all-purpose flour |
1 cup milk |
1 egg yolk |
1/2 teaspoon salt |
pinch of red pepper |
1 teaspoon onion juice |
1 (15-ounce) can asparagus spears, drained and cut into 1/2-inch pieces |
2 cups fine, dry breadcrumbs |
Directions:
1. Melt butter in a heavy saucepan over low heat; add flour, stirring until smooth. Cook 1 minute, stirring constantly. Combine milk and egg yolk, stirring well; gradually add to flour mixture. Cook over medium heat, stirring constantly, until thickened and bubbly. Stir in salt, pepper, onion juice, and asparagus pieces; chill mixture thoroughly. 2. Shape into patties, using about 1/4 cup mixture for each. Roll patties in breadcrumbs, and place on an ungreased baking sheet. Bake at 350° for 20 minutes or until tops are golden brown. Turn and bake an additional 5 minutes. |
