Baked Apples With Philly Custard |

4 apples (pink lady or lady williams) |
250 ml dessert wine |
1 cinnamon stick |
1/4 cup brown sugar |
250 g cream cheese spread |
1/2 cup milk |
2 tablespoons caster sugar |
1 vanilla bean, split |
1 tablespoon custard powder, blended with |
1 tablespoon milk, to form a paste |
1 teaspoon arrowroot |
Directions:
1. CUT apples into three slices, place into a large shallow baking dish with the wine and cinnamon. Sprinkle over the brown sugar. Bake at 180°C for 20 minutes until tender. Spooning the syrup over the apples occasionally. 2. WHISK together the cream cheese and milk. Heat in a saucepan. Add sugar, vanilla bean and custard powder paste. Bring to the boil, stirring until thickened. 3. REMOVE apples from syrup, and keep warm. Pour syrup into a small saucepan. Combine arrowroot with some of the syrup to form a paste. Add to saucepan, and simmer until thickened. Serve apple slices with syrup and custard. |
