Just something I threw together... this can be used as a breakfast, or a healthy dessert! I listed the amounts I used, but unless you dice the apple REALLY finely, I think it would probably be better if the oatmeal and liquid were increased to 1/3 cup and 1/2 cup, respectively. Ingredients:
1/4 cup oatmeal |
1/2 teaspoon cinnamon |
1 pinch nutmeg |
1 tablespoon splenda sugar substitute |
1/2 teaspoon baking soda |
1 teaspoon lemon juice |
1 small apple, diced |
1/3 cup water (or milk) |
Directions:
1. Preheat oven to 350. 2. Dice the apple and pour lemon juice over it (to prevent browning). 3. Combine the first five ingredients in a bowl. Add the apple, lemon juice and water and stir to combine. 4. Pour into a round 2-cup Pyrex dish. Bake for 30 minutes, or until most of the liquid has evaporated. |
