This recipe is so much easier, thanks to the microwave. The recipe came from my GE Microwave cookbook that came with the oven which is almost 20 years old now. Ingredients:
1 acorn squash |
2 tablespoons water |
1 -2 tablespoon butter |
Directions:
1. cut squash in half, scoop out seeds and any loose membrane, place cut side down in a baking dish to which you have added about 2 Tbs water. 2. Cover loosely with wax paper and cook on high for 8 minutes in microwave oven. 3. Open oven and turn squash over, add 1 to 2 tbs of butteror margarine in cavity, recover with wax paper and cook for 6 additional minutes. 4. Allow to stand for 5 to 10 minutes before serving. |
