Bake Sweet Potatoes W African-style Peanut Sauce |

Nutty Spicy flavors in the filling complement the sweet potato! I would serve with Grilled Pork Chops and Broccolini! Ingredients:
6 medium sweet potatoes (about 3 lbs) |
1 teaspoon canola oil |
1/3 finely chopped onion |
1 tablespoon of fresh grated ginger |
2 garlic cloves minced |
1 1/2 teaspoons ground cumin |
1 1/2 teaspoons ground coriander |
1/8 of ground red pepper |
3/4 cup of h20 |
3/4 cup of tomato sauce |
1/4 cup of peanut butter |
1 teaspoon of sugar |
1/4 teaspoon of salt |
2 tablespoons of chopped fresh cilantro |
Directions:
1. Pre-heat oven to 375 2. pierce potatoes with a fork 3. bake at 375 for and hour or so or until tender 4. cool potatoes slightly 5. Heat oil in a medium skillet over medium-low heat Add onion, ginger, and garlic, cook 3 mins. add cumin, coriander, and pepper, cook 1 min. Add 3/4 cup of H20 and then tomato sauce, PB, sugar and salt! stirring until smooth, bring to a simmer and Cook 2 mins. or until thick 6. Split potatoes lengthwise, cutting to, but not through, other side, spoon about 1/4 cup sauce onto each potato with 1 teaspoon of cilantro! |
