A nice and easy fruitcake that will add $$$ to your bake sale coffers! Ingredients:
4 oz margarine |
6 oz sugar (brown or white, your choice) |
6 oz raisins |
6 oz currants |
2 oz candied peel |
8 oz water |
2 eggs, beaten |
pinch of salt |
1 tsp baking soda |
1 heaping teaspoon mixed spices (cinnamon, nutmeg, allspice) |
4 oz all-purpose flour |
4 oz self-rising flour |
Directions:
1. Preheat oven to 375F/180C/Gas Mark 4 2. In a saucepan over med heat put water, margarine, sugar, spices, salt and dried fruit and bring to a boil. 3. Redice to a simmer for one minute. 4. Allow to cool in a large mixing bowl. 5. After cooling add eggs, baking soda and flours. 6. Mix well. 7. Grease and flour 2 medium 1 lb. loaf tins (or line with baking parchment). 8. Divide batter into tins and bake for 90 minutes or until toothpick inserted into center comes out clean. 9. Cool for 20 minutes then turn out onto wire racks until completely cool before slicing and serving. 10. For cranberry loaf, use 8 oz dried cranberries instead of dried fruit listed above. |
