Fresh summer vegetables and kicked up with a sweet and tangy vinaigrette. Easy to make and yummy. Ingredients:
2 cups grape or cherry tomatoes |
2 small zucchini, coarsley chopped |
2 small yellow summer squash, coarsley chopped |
2 tablespoons minced fresh cilantro (may be omitted) |
5 tablespoons white wine vinegar |
3 tablespoons sugar |
1 teaspoon dijon mustard |
1/4 teaspoon salt |
1/8 teaspoon fresh ground pepper |
2 tablespoons olive oil |
Directions:
1. In a large bowl, combine the tomatoes, zucchini, yellow squash and cilantro. 2. In a blender, combine the vinegar, sugar, mustard, salt and pepper. 3. While processing, gradually add oil. 4. Drizzle over vegetables, toss to coat. 5. Cover and refrigerate for 30 minutes. 6. Serve. |
