Baingan Bharta with Aloo Ingredients:
2 eggplant |
6 tbsp tomato puree |
3 tbsp olive oil |
1 small onion, diced |
1 small potato, diced |
1 tsp cumin |
2 tsp salt |
1/2 tsp turmeric |
1/2 tsp garlic paste |
1/2 tsp ginger paste |
Directions:
1. Bake the eggplant for 45 minutes at 350 or until tender. Mash or blend eggplant to a smooth consistency. 2. Heat olive oil and cumin over medium heat until the mixture sizzles. 3. Add onion and potato and cook over medium heat until potato is soft and onion is golden brown. 4. Add puree and spices and cook until oil separates from mixture. 5. Add eggplant and mix well. 6. Cook over low heat for at leat 15-20 minutes to let the spices mix into the eggplant. |
