An easy breakfast to make that fills you up, has lots of room for improvisation, and goes great with some saturday morning coffee. Ingredients:
two fresh bagels |
1/2 cup of egg beaters |
4 leaves of basil, or 2 tsp |
pinch of salt |
a few pinches of pepper |
1/2 avocado |
soy bacon |
1 tbsp parmesan cheese |
2 slices of swiss cheese |
veganaise |
Directions:
1. heat a medium sized pan to medium heat 2. PAM/butter coat the pan lightly 3. pour in egg so that it's about 1/4 in depth 4. add salt and pepper 5. tear up basil leaves into the egg 6. sprinkle parmesan cheese on 7. microwave frozen soy bacon (3 strips) for about 1 minute 8. break each slice in 1/2 (making a total of 6 bacon pieces) 9. slice and toast the bagels 10. when the top of the egg is no longer shiny/watery/jiggly give it another 20-30 seconds 11. turn off the heat, flip the egg over so it looks like an omelette 12. slice the omelette in two 13. lightly veganaise the bagels 14. place egg on the bagel 15. place swiss cheese on top 16. place 3 1/2 bacon strips on top 17. place sliced avocado on top 18. place top of bagel on top 19. optionally... 20. baby bell peppers in the eggs 21. tomatos in the eggs 22. sausage instead of bacon 23. whole wheat pita instead of bagel (in this case you would put the entire omelette inside a 1/2 pita) 24. stack the eggs and cheese onto one bagel for the ultimate breakfast! |
