My wife, Amanda, created this one; loosely based on a slimming club recipe. My preference is to have it with a pastry base, but anyone watching calories (there’s none in BaconSalt) can do it exactly as below. The Baconsalt flavouring can be found in many USA stores or from . 400 g cottage cheese (low-fat) |
4 eggs |
2 onions (sliced) |
1 tomato (sliced) |
1 chili |
1 teaspoon flavoring (baconsalt) |
Directions:
1. Mix the eggs and cottage cheese in a bowl with one of the onions and add a heaped teaspoon of baconsalt. 2. Lightly oil an 8 to10inch flan dish, (no pastry!) and pour the mixture inches 3. Top with sliced onion, sliced tomato and chilies or peppers. 4. Bake at 200°C until firm to the touch, (30 to 40 minutes) 5. Serve on its own for a snack or with a mixed salad for lunch. |
