What an easy, imprssive entree!Serve with a salad...done! Great flavor! Found this and the photo in a Pillsbury book called Grilling from 2001 Ingredients:
2 t lemon juice |
1/2 t cayenne |
1/8 t garlic powder |
12 fresh uncooked jumbo shrimp. |
shelled, deveined with tails on |
6 fresh large sea scallops, halved |
12 slices bacon, halved |
1 lrg lemon, cut into 12 wedges |
Directions:
1. In medium bowl or resealable bag, combine juice, pepper and garlic powder 2. Add shrimp and scallops, turn to coat, let stand at room temp to marinate while cooking bacon 3. Partially cook bacon 4. Drain seafood, discard marinade 5. Wrap 1 piece of bacon around each piece of seafood 6. Thread loosely onto skewer alternating shrimp, scallop, lemon 7. Cook 4 – 7 minutes over medium turning once 8. 6 kabobs, 3 servings |
