Delicious beef roast wrapped in bacon. Ingredients:
1 (21/4lb) eye of round roast |
1tbs fresh ground pepper |
1tsp kosher salt |
8oz. bacon |
2tbs butter |
Directions:
1. Preheat oven to 425 2. Pat beef dry. Sprinkle with salt and pepper. Wrap with bacon strips,overlapping strips as you go. Secure with toothpick,if necessary. 3. In large ovenroofskillet,melt butter over med-high heat. Sear roast in skillet for 6 to 8 mins,turning so it browns on all sides. Place roast in skillet in oven. 4. Bake 55 mins or till roast registers 135 on thermometer for med-rare.Remove roast from oven and let rest for 15 mins before slicing. |
