I found this recipe in one of those cooking magazines years ago. They're a baked potato with a twist. Ingredients:
2 medium potatoes |
1 small onion, thinly sliced |
salt and pepper |
4 slices bacon |
Directions:
1. Rinse potatoes under cool water. 2. Scrub with a vegetable brush. 3. Pat dry with paper towels. 4. Cut potatoes in half lengthwise. 5. Place thin onion slices between potatoes. 6. Sprinkle with salt and pepper. 7. Top with the other potato half. 8. Wrap two slices of bacon around each potato. 9. Secure with several toothpicks. 10. Place in a greased baking pan. 11. Bake 1 hour and 20 minutes; in a 325 degree oven. |
