Bacon-wrapped Green Beans Or Asparagus |

This dish works well as a side or an appetizer. Make lots because they'll go fast! The brown sugar tones down the saltiness of the bacon, and the maple flavor complements the smokiness. You can use green beans or asparagus. Ingredients:
one lb green beans |
1/2 lb bacon |
1/2 c brown sugar |
Directions:
1. Preheat oven to 400 degrees F. 2. Blanch (quick boil) the green beans in boiling water just until the stalks turn bright green. While you're waiting for the water to boil, prepare an ice bath (a large bowl with ice and water) 3. Drain and drop the beans into the ice bath for about 2 minutes. 4. Drain beans. 5. Cut bacon strips into halves or thirds. 6. Group 3-4 beans into small bundles. 7. Wrap bacon around each bundle. 8. Place the green bean bundles on a cookie sheet. 9. Spoon 1/2 to 1 tsp of brown sugar on top of each bundle. 10. Bake for 10-12 minutes. |
