6 russet potatoes |
1 lb. bacon |
8 oz. good sharp cheddar grated |
8 oz. sour cream |
2t. horseradish (more or less depending on your taste) |
oil for frying |
Directions:
1. Boil potatoes till just tender (8-10 min.) allow to cool completely in an ice bath works well 2. Slice potatoes about an inch thick 3. Wrap each slice with a piece of bacon secure it with a tooth pick 4. fry the potatoes in batches until bacon is cooked and potatoes are golden 5. Drain on paper towels season with salt arrange on an oven proof platter 6. Top with cheddar and place under the broiler to melt the cheese 7. For The Horse Radish Cream 8.
