Bacon-Topped Turkey Medallions |

From a cooking club magazine... Ingredients:
2 slices thick-cut bacon, chopped |
2 turkey tenderloins, cut into 1/4 in thick medallions (1 1/4 lbs) |
1/4 teaspoon salt |
1/4 teaspoon pepper |
2 tablespoons shallots, minced |
2/3 cup apple juice |
2 tablespoons maple syrup |
1 teaspoon lemon juice |
1 teaspoon dijon mustard |
2 tablespoons chopped fresh chives |
Directions:
1. Cook bacon in large skillet over medium heat until crisp. Drain on paper towel; reserve skillet drippings. 2. Sprinkle turkey with salt and pepper. 3. Increase heat to medium-high; heat drippings in skillet until hot. 4. Cook turkey 4-6 minutes or until lightly browned and no longer pink, turning once. 5. Remove turkey, cover loosely with foil. 6. Add shallots to skillet; cook and stir 1 minute. 7. Add apple juice stirring to scrape up any browned bits from bottom of the pan. 8. Boil 3-4 minutes or until reduced by half. 9. Whisk in syrup, lemon juice and mustard. 10. Boil 2 minutes or until slightly thickened. 11. Stir in bacon and chives; spoon over turkey. |
