BACON TOMATO PASTA MACARONI SALAD This recipe came from an estate sale. I obtained it when I purchased the family collection from the Daly Estate in Fort Worth, Texas in 1992. Ingredients:
2 cups uncooked elbow macaroni |
5 green onions finely chopped |
2 large tomatoes diced |
1-1/4 cup celery diced |
1-1/4 cup mayonnaise |
5 teaspoons white vinegar |
1/4 teaspoon salt |
1/4 teaspoon pepper |
1 pound cooked bacon crumbled |
Directions:
1. Cook macaroni according to package directions then drain and rinse in cold water. 2. In large bowl combine macaroni, green onions, tomatoes and celery. 3. Combine mayonnaise, vinegar, salt and pepper then pour over macaroni mixture. 4. Stir to coat and put in rectangular baking pan then cover and chill for 2 hours. 5. Just before serving add bacon. |
