These tiny bacon, tomato, cheese tarts are an easy appetizer and have a fancy look. Ingredients:
one recipe double pie crust or one pkg prepared pie crusts |
one lb. bacon, cooked |
2 med tomatoes, chopped, juice, seeds, and all |
one small onion, chopped |
five oz shredded swiss cheese |
1/2 cup mayo |
Directions:
1. Roll out pie crust and cut 24 2 3/4 rounds. Press each round into a mini muffin tin pan which has been sprayed with olive oil cooking spray 2. Crumble cooked bacon and combine with chopped tomatoes, onions, shredded cheese, and mayo. 3. Stir until well mixed and spoon into pastry lined muffin tins. 4. Bake for 12 minutes at 375 degrees 5. Cool for 10 min. and remove from mini muffin tins. 6. Serve warm |
