Bacon Stuffed Sweet Potatoes |

Tried and true and oh so good. Ingredients:
8 medium sweet potatoes |
vegetable oil |
9 slices bacon cooked and crumbled |
1/2 cup sour cream |
2 tablespoons milk |
1 egg beaten |
1 teaspoon granulated sugar |
1 teaspoon salt |
paprika |
Directions:
1. Scrub potatoes thoroughly and rub skins with oil and bake at 400 for 1 hour. 2. Slice skin away from top of each potato carefully scooping out pulp leaving shells intact. 3. Mash pulp then add bacon, sour cream, milk, egg, sugar and salt and mix well. 4. Spoon into shells and sprinkle with paprika. 5. Bake at 400 for 10 minutes. |
