This recipes comes from the Batton Estate that I purchased in Rockwall, Texas in 1992. Tried and true and very delicious. Enjoy Ingredients:
6 slices bacon cooked and crumbled with fat retained in pan |
1/4 cup white onion minced finely |
1 teaspoon basil |
3/4 pound shredded swiss cheese |
10 ounce package spinach thawed and squeezed dry |
1/4 cup fresh mushrooms sliced |
1-1/2 cups heavy cream |
5 eggs well beaten |
2 tablespoons brown mustard |
Directions:
1. Add basil and onions to bacon fat and saute 10 minutes until tender. 2. Whisk eggs, mustard and cream. 3. In buttered quiche dish layer cheese, spinach, mushrooms, onion mixture and bacon. 4. Pour egg mixture over everything being careful to cover all the layers. 5. Bake at 325 for 50 minutes then cool slightly and serve while warm. |
