During the pregnancy with my second daughter I had lots of cravings and one of them was the Suddenly Salad Ranch Pasta Salad. I decided to try and make my own version with a couple additions. This taste very close to that but is slightly different. I really enjoyed it and it satisfied my craving! Ingredients:
16 ounces pasta shells |
1 cup mayonnaise |
3 tablespoons ranch dressing mix, powdered |
4 hard-boiled eggs, small diced |
2 celery ribs, small diced |
6 green onions, small diced |
2 1/2 ounces bacon, pieces |
Directions:
1. Bring a large pot of water to a rolling boil. 2. Add pasta and cook until done, usually 8-10 minutes. Just until pasta is al dente, not mushy. 3. Drain pasta and set aside. 4. Stir together mayonnaise and ranch mix until combined and add to pasta. 5. Add eggs, celery, green onions and bacon pieces to pasta and mayonnaise mixture then stir to combine. 6. We serve while still warm or room temperature but you can chill and then serve if you prefer. 7. Note: We buy a large container of powdered ranch dressing mix instead of the individual packages. 3 tablespoons powder dressing mix = 1 oz individually packaged powdered dressing mix. |
