A great one-dish dinner, rich, warm, and very comforting. Bacon makes any recipe better! Source: The Best Little Cookbook in Texas, a collection of recipes frrom the Junior League of Abilene, TX, published by Hart Graphics, Inc., Austin, Tx. Ingredients:
2/3 cup diced lean bacon |
3 mild white onions, chopped |
4 green onions, chopped |
2 tablespoons flour |
6 cups bouillon (8 bouillon cubesd made with 6 cups water) |
4 large potatoes, peeled & thinly sliced crosswise |
2 egg yolks |
1 cup sour cream, at room temperature |
1 tablespoon minced parsley |
1 tablespoon dried celery |
Directions:
1. In da deep, heavy pot, saute bacon for a few minutes.l. 2. Add onions and cook 5-10 minutes or until soft but not brown. 3. Blend in flour and gradually stir in bouillon. 4. Add potatoes; cover and simmer one hour. 5. Mix egg yolks into sour cream. Spoon a little hot soup into cream mixture, then slowly stir cdream mixture into hot soup. 6. Simmer 5-8 minutes; do not boil. 7. Add herbs. (I think this step is optional - good without). 8. Ladle into deep, warmed soup bowls or mugs. |
