This is a good side dish as well as a salad. Ingredients:
2 lbs. red bliss or new potatoes, cut into 1/2 in. cubes |
1 c. canola cholesterol free mayonnaise |
1/3 c. diced celery |
2 tbs. crumbled cooked bacon or bacon bits |
2 tbs. chopped fresh chives |
1 tsp. deli mustard |
1/2 tsp. apple cider vinegar |
1/4 tsp. sugar |
Directions:
1. Cover potatoes with water in 4 quart saucepot. Bring to a boil over high heat. Reduce heat to low and simmer uncovered 8 minutes or until potatoes are tender, dreain and cool slightly. 2. Meanwhile, combine remaining ingredients in large bowl. Add potatoes and toss to coat. Season, if desired, with salt and ground black pepper. Serve chilled or at room temerature. |
